5 days of tasting the three Slow Food Presidia of Garfagnana and Valle del Serchio: the Biroldo sausage, potato bread and Bazzone ham.

We will take you to the most authentic places and introduce you to a series of Garfagnana restaurants selected by the Slow Food movement, and not only that, accompanying you to the most beautiful places in this area which offers tourists the wonderful enchantment of the art of nature and taste.

Programme

Early afternoon arrival in Garfagnana, by own means. Meeting with the guide in Castelnuovo di Garfagnana where the tour starts. Check-In. Accommodation in the reserved rooms. Presentation of the programme by one of our representatives.

Dinner, typical “Garfagnana” with a tasting of local cuisine, at the “Osteria Vecchio Mulino” in Castelnuovo di Garfagnana (a cheese and a bottle from Osterie d’Italia 2020 – places recommended by Slow Food). Return to the hotel. Overnight stay.

In the morning visit (only outdoors) to the Rocca Ariostesca of Castelnuovo di Garfagnana, which dominates the centre of the village and which in the sixteenth century was home for three years to the poet Ludovico Ariosto, who had been named governor of the province of Garfagnana, then under the rule of the Este family. Walk through the streets of the centre of Castelnuovo di Garfagnana. Possibility to buy local products in the shops. Followed by a visit to the Fortress of Mont’Alfonso. Free lunch. In the afternoon free time available for visits, to be organised optionally with the guide.

Dinner, typical “Garfagnana” with a tasting of the products of the local cuisine, at the restaurant “Il Pozzo” in Pieve Fosciana (a cheese from Osterie d’Italia 2020 – places recommended by Slow Food). Return to the hotel. Overnight stay.

In the morning visit to Barga, recognised as one of the most beautiful villages in Italy. Visit to the Romanesque cathedral, dedicated to San Cristoforo. We continue the visit with the Church of the Crucifix and then stop in the centre to admire the Renaissance palaces and the Teatro dei Rassicurati. Along the way (suggestive of the beautiful panorama) we find the thousand-year-old Romanesque parish church of Santa Maria a Barga, known as Pieve di Loppia. Next, to Castelvecchio Pascoli for a visit, on the Colle di Caprona, to the house where the poet Giovanni Pascoli lived and is buried. Free lunch. In the afternoon visit to Ghivizzano with its castle. A walk through the village. Guided visit to an artisan pork processing workshop, from the production and marketing of pork products to typical local cold cuts such as Biroldo della Garfagnana, lard, sausage and soppressata, passing on the peasant’s memory. Guided tasting. Possibility of purchasing products. We recommend the new Prosciutto Bazzone della Garfagnana e Media Valle del Serchio: Bazzon Cotto of “ Podere delle Pianacce” the mark of excellence. This is a leg of Italian pork selected at origin for the production of the raw ham. The ham is flavoured with a natural brine prepared by boiling aromatic herbs and vegetables. It is boned manually and vacuum-packed before being steamed. Dinner, typical “Garfagnana” with a tasting of the local cuisine, at the “Antica Locanda San Leonardo” in Ghivizzano. Return to the hotel. Overnight stay.

In the morning at school of… cheese! From the stable to the table. A journey that will take you to the heart of cheese production (from the arrival of the milk to the maturing process). Possibility of purchasing products. Free lunch. In the afternoon free time for visits, to be organised optionally with the guide.
